The beauty of oatmeal

Oatmeal flour is easy to make and much more nutritious for you than either white or whole wheat flour. I make mine in an ordinary blender. I put in a cup or two of rolled oats and grind for approx. 30 seconds. I have been experimenting using it in cookie recipes as a flour substitute but the day I tried it in pancakes - I knew I had found something simply glorious. Here it is: 1 1/2 cups oatmeal; 1 Tablespoon whole flax seeds; 2 Tablespoons cashews ( I make mine slightly rounded) 1/4 teaspoon sea salt; 1 1/2 teaspoons baking powder; 1 cup of water; 2 Tablespoons honey; Put the oatmeal, cashews and flax seeds in the blender and grind until it is a coarse flour. Pour it into a bowl and add the remaining ingredients. Allow it to sit and thicken while your frying pan or griddle gets hot. Enjoy!

  1. That sounds delicious!! I have often used oatmeal flour, too. The girls favorite meal (even as young teens and pre-teens) is my 3 Bears Cereal. It is Irish oatmeal and I add cinnamon to it--cooked and then I add a pat of butter in the middle of it and sprinkle it with raw sugar. They have been eating it since they were toddlers. I usually slice up a banana or fresh apple on the side. I made it this morning for SweetCheeks before she went off to school.

  4. How easy to make your own oatmeal flour! We buy 7-grain oatmeal from Montana Wheat and it is so amazing in bread. It has so much flavor. I will have to give your oatmeal pancakes a try, so much better for you! Hugs to you today :)

  5. I discovered your blog last night and read all the way through from the beginning. You need to write a book. (Seriously!)

    I learned oil painting during the past several years but life events have kept me away from it for quite a while now. It will probably be another year before I can get back to it.

    Reading about your weaving experience has made me realize that creative work can come and go in our lives. Reading about how you always found an outlet for your creative impulses has inspired me to think of what creative work I could do right now while I wait to get back to my true love.

    1. Hi Theresa I am truly thrilled to meet you! I am glad you found something encouraging in my posts. I hope you will pursue other creative avenue's until you can oil paint again. I truly understand what and where you are. Yes- the time I spent away from tapestry weaving has blessed me a lot. Those explorations in other medium's have taught me so much to the point of shifting my tapestry weaving in another direction which I plan to share. I look forwards to getting to know you!     I grew up in the Pacific Northwest (Washington State) As a child I went to the ocean on the Olympic Penninsula almost every summer. Then my husband and I kept a sailboat at Anacortes for a few years and cruised among the San Juan Islands.

    My heart always longs for our wild Pacific beaches, so even though you face many challenges, I think you are so blessed to live where you do.

    I live in Spokane Washington now- I need to stay in this area because my kids and grandkids are here. However we are planning to move out in the country within a year or so and live in a small home. I can't wait to have a simpler life. I'm studying up on it which is how I found your blog (through the joyful cottage blog)

    I'll be praying for you and your daughter and the work you do for homeless kids. God bless you for that!
